Recipe sharing at work has become one of my favorite things. Mostly because I don't have the confidence to cook. But having people explain to me how simple things are has been helpful in cooking meals that I have actually enjoy eating. Also, did I mention they're pretty darn healthy? One of my fellow co-workers has an awesome blog and I swear I steal almost everything off of it- mostly because after she posts I end up having her walk me through step by step on how to make everything. I'll share a few of my favorite recipes I've tried of hers at the end of the post!
Like I said, having class one night a week has really been nice because I've had my nights all to myself. Granted, I should probably be utilizing those for homework but the semester still started and things are still pretty light (as I receive the side eye from my thesis advisor). So this past week I've come home every night and run anywhere between 1-3 miles and have started a 30-day yoga challenge and am currently on Day 4. I even made it to a Zumba class one night! I feel like I can already tell a difference from Sunday. I've really missed being able to take time out of my day for myself and have really been rejuvenated this week. To help keep me motivated to graduate and stay in shape Andrew and my two little sisters registered for the Color Run in Kansas City this coming May! It's going to be a great time. This will be my second Color Run but first run with GLITTER-found this funny but also curious to know if the Color Run is trying to tell it's participants something! :)

The bottom two were super easy to make because all you have to do is throw everything in the crock pot in the morning and BOOM it's done when you walk in the door.
